Amazing Japanese chef cuts a cucumber in more ways than you can imagine

My four year old son loves cucumber. Yes, it sounds a bit strange, but for some reason he loves cucumbers, and even more so in sushi rolls. I haven't shown him this video yet, but I am sure when I do, he will be amazed and start asking for something more than his round cucumber slices.

I wonder how many years of experience is needed to be able to do this to a cucumber?
